Blueberry Muffin French Toast

List of Ingredients
For Muffins:
2 Cups flour
1/2 Cups sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 Cup oil
2 beaten eggs
2 Cups apple juice
2 Cups Blueberries
For Batter:
2 Cups half and half
12 eggs
2/3 Cup flour
2 Tbsp vanilla extract
1/2 tsp almond extract
cinnamon
nutmeg
Maple Syrup
Muffins: Combine dry ingredients (flour, sugar, baking powder, baking soda, salt). Fold in liquid ingredients (oil, egg, juice). Add blueberries and bake 40 minutes at 350 degrees. This recipe is great for fresh or day old muffins. They slice easier when chilled.
Batter: Combine half and half, eggs, flour vanilla and almond extracts, and spices. Thickly slice muffins (from top to bottom) and dip into batter. Place in hot skillet with half butter and half oil. Cook until crisp and brown on both sides. Serve with Maine maple syrup.
