    1 cup milk, scalded
    1/4 cup butter
    1/4 cup sugar
    1 egg
    3 1/2-4 cups unbleached flour
    1/4 cup lukewarm water
    1 package active dry yeast (2 1/4 tsp.)

    Scald the milk and melt butter together for 2 minutes in the microwave. Add milk and butter to mixing bowl with sugar and egg. Mix well. Add 2 cups of the flour, mix well. By now the mixture should be lukewarm, if not let it cool. Combine water and yeast and let it dissolve for a minute. Add the yeast to the warm dough mixture and stir in well. Add remainder of flour, 1 1/2 to 2 cups to make soft dough that you can knead. Mix well by kneading for a minute or so. Place it in a greased bowl and turn it to coat the surface of the dough. Cover with plastic wrap and refrigerate for at least two hours, or up to five days to keep it handy and ready.

    About two hours before baking, get out as much dough as you need. A half recipe will make a small ring that fits in a pie tin for baking. A full recipe will make a large ring that can be baked on a pizza pan. Roll out the dough into a rectangle shape a little less than 1/4 inch thick, twice as long as wide. Spread with a light layer of melted butter, about 1 tbsp. Sprinkle lightly with cinnamon and brown sugar (1/4 cup). The more brown sugar the stickier the bottom. Sprinkle with raisins, currents, or dried fruit if desired. Roll it up and make a ring on a well-sprayed pan. Using scissors, cut through most of the roll from the top down, about 1-1/2 inch wide pieces. Be sure to leave the bottom part connected. Turn each partially cut roll out and to the side of the pan so they layer on top of each other a bit to make a rose pattern around the ring. Let rise for 1-2 hours in a warm place (heat the oven to 200, turn it off and place the rolls in with the door left open) until they double. Bake in a pre heated 375-degree oven for 10-12 minutes, or until golden brown. They may by glazed. Serve on a round platter or plate with butter while they are still warm and fresh.
