Fly Off the Plate Pancakes

IMPORTANT NOTES: *They come out small and thick, about 4-inches in diameter, so allow for a lower flame to get the inside cooked without torching the outsides.
1 cup flour
1 tablespoon wheat germ
1/4 teaspoon salt
1 tablespoon sugar
1 tablespoon baking powder
1 egg
1/2 cup milk
1 teaspoon vanilla extract
2 round tablespoons of fat free yogurt
1 1/2 tablespoons of melted butter
Choose a couple optional ingredients:
One apple, pear, or peach cut into cubes.
Raspberries, Blueberries, Strawberries, Cherries
Raisins
Sliced bananas
Pecans, walnuts, almonds, etc.
Dashes of Cinnamon and Nutmeg
1 tablespoon cocoa Powder
Chocolate, peanut butter, or butterscotch chips!
Extra vanilla, or any other flavoring or extract.
1. Sift together the dry ingredients.
2. Beat eggs, milk and yogurt in another bowl.
3. Pour the egg mixture into the dry ingredients, beating with a whisk.
4. Add the optional items, carefully mixing.
5. Cook on a griddle or frying pan, as with any pancakes.* see important cooking note at top of recipe.
Makes 7 or 8 small pancakes. Serves 2 very hungry persons, or up to 4 reasonable persons who are also having other food with them.
The most recent extraordinarily delicious combination we had was: a little extra vanilla, a heaping tablespoon of cocoa powder, and a chopped pear. The flavor of the pear was intensified by the cooking and blended perfectly with the subtle chocolate.
Apples, cinnamon and nutmeg are the classic mix.
For an especially decadent day, chocolate chips pancakes are really great with whipped cream on top, though I have not tried them with this particular recipe.
