    Puffy Peach Pancake with Almond Cream

    PANCAKE
    3 Tbsp. EXTRA VIRGIN OLIVE OIL
    1/2 cup sugar
    3 Tbsp. water
    6 medium-size firm peaches (about 2 pounds) peeled and cut into 1/2 inch slices
    3 eggs
    3/4 cup milk
    3/4 cup all purpose flour
    1/4 tsp. salt

    ALMOND CREAM
    3/4 cup vanilla nonfat yogurt
    1 tsp. almond extract

    Recipe



    1. Heat oven to 425 degrees.

    2. In a 10-inch ovenproof skillet; heat olive oil, sugra and water boiling. Add peach slices; cook about 5 to 7 minutes, stirring frequently.

    3. Meanwhile, in blender, at medium speed, blend eggs, milk, flour and salt until batter is smooth. Pour batter over peaches.

    4. Place skillet in oven; bake pancake 20-25 minutes or until puffed and golden.

    5. While pancake is in oven, make almond cream by whisking yogurt and almond extract in a small bowl; set aside.

    6. Serve pancake immediately from oven; drizzle almon cream over each serving.

    Makes 6 servings
