    4 english muffins, split and lightly toasted
    8 thin ham slices, warmed
    8 thin slices papaya or fresh pineapple
    8 eggs, poached

    Lemon Chive Hollandaise Sauce
    2 egg yolks
    1/2 Tbsp. fresh lemon juice
    1/4 to 1/2 tsp. hot pepper sauce
    salt and white pepper to taste
    1/2 cup EXTRA VIRGIN OLIVE OIL, heated until hot
    2 Tbsp. sour cream
    1 Tbsp. snipped fresh chives

    Recipe



    1. On each muffin half place a slice of ham.

    2. Fan 1 papaya slice over ham, then add a poached eggs.

    3. Spoon Lemon Chive Hollandaise Sauce on top.

    4. Garnish with Chive strips or cilantro.

    Lemon Chive Hollandaise Sauce
    1. In a blender container, combine egg yolks, lemon juice, hot pepper sauce, salt, and white pepper; blend at high speed for 30 seconds.

    2. With blender still running, pour heated olive oil in a steady stream until mixture is completely emulsified. 3. Transfer to a small bowl; stir in sour cream and chives. Blend well.

    Serves 4
