    Tomato Lemon Twist Smoothie

    2 tomatoes, cut in chunks
    1 cup tomato juice (or 2-3 medium tomatoes, juiced)
    1/2 lemon, juiced, (peeled if using a juice machine)
    1 teaspoon freshly grated lemon rind
    6 fresh basil leaves, rinsed


    Place the tomato chunks in a freezer bag and freeze them until solid. Pour the tomato juice into a blender and add the frozen tomato chunks, lemon juice, lemon peel, and basil. Blend on high speed until smooth and serve immediately.
