    Sweet Potato Biscuits with Honey Butter

    1 sweet potato
    1¼ cup buttermilk
    3½ cup flour
    5 tsp. baking powder
    4 tsp. sugar
    2/3 cup vegetable oil
    ½ stick butter, melted

    Preheat oven to 400 degrees.

    Bake sweet potato. Peel and mash into a large bowl. Add buttermilk, flour, baking powder and sugar, vegetable oil and melted butter. Stir until a crumbly dough is formed. Place the dough on a floured surface. Roll dough into a rectangle 6 by 12 inches. Using a knife, but into 12 rectangular biscuits. Place biscuits on an ungreased baking sheet. Bake about 12 to 14 minutes, or until biscuits have risen and are lightly browned.

    Makes 1 dozen biscuits.

    Honey butter:
    ½ cup butter
    1/3 cup honey
    In a small bowl, stir together butter and honey until light and fluffy. Serve with hot biscuits.
