Apple and Cinnamon Scones

Some sugar can be added to the apple while being cooked if desired.
List of Ingredients
Cooking apples - 3/4 pound peeled, cored and chopped
Self raising flour - 2 cups
Salt - ½ teaspoon
Ground cinnamon - 1teaspoon
Butter - 2 Tablespoons
Milk - 3/4 cup plus extra for brushing
Ground cinnamon - ½ teaspoon
Demerara or coarse brown sugar - 1 Tablespoon
Double cream or whipping cream - 3/4 cup
Recipe
Cook the apples in a little water until soft, mash well or puree. Allow to cool. Put the flour, salt and 1 teaspoon cinnamon into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Make a well in the centre, add one-third of the apple and the milk. Mix until the mixture forms a dough.
Knead quickly on a floured surface then roll out to 3/4 inch thick. Cut into small rounds approximately 2 inches in diameter. Place on a greased baking tray. Brush the tops with milk and sprinkle the ½ teaspoon cinnamon and the demerara sugar over them. Bake at 450 degrees for 10 minutes or until tops are golden brown.
Whip the cream. Cool the scones, split in half and sandwich together with the remaining apple and the whipped cream.
