    Cinnamon Butter Puffs Muffins

    1/3 cup solid vegetable shortening
    1/2 cup sugar or less
    1 egg
    1 1/2 cups unbleached white flour
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. nutmeg
    1/2 cup milk
    For topping:
    1/2 cup butter, melted
    1/2 cup sugar combined with 1 tsp. cinnamon

    Preheat oven to 350 F and grease the muffin tins. Put shortening,
    sugar, and egg in a medium mixing bowl and beat well. Mix the
    flour, baking powder, salt, and nutmeg and add to the first mixture
    (stir it in a little at a time). Pour in the milk and beat until
    blended and smooth. Fill the tins about 2/3 full. Bake 20-25
    minutes until lightly golden. As soon as they are done, dip them
    one by one first in the melted butter, and then roll them in the
    cinnamon-sugar mixture.
