    Cottage Cheese Muffins

    1 1/2 cups All-purpose flour
    1/2 tsp. Baking powder
    1/2 tsp. Baking soda
    1/2 tsp. salt

    1/4 cup Margarine, softened
    3/4 cup Brown sugar, packed
    1 Large egg
    1 cup Low-fat cottage cheese (less than 1% Milk Fat)
    1/4 cup Skim milk

    1/2 cup Raisins or currants


    Combine first 4 ingredients in bowl. Stir. Set aside.

    Cream margarine and sugar in mixing bowl. Beat in egg.
    Add cottage cheese and milk. Beat to mix throughly.

    Stir in raisins. Add flour mixture. Stir just to
    moisten. Spray muffin cups with no-stick cooking spray.
    Fill 3/4 full. Bake in 375 degree oven for about 20
    minutes. Makes 12 medium muffins.
