    12 Muffins

    1 c Plain Yogurt
    1/3 c Olive Oil
    2 ts Dried Basil
    1 Egg
    2 c All-Purpose Flour
    2 ts Baking Powder
    1/2 ts Baking Soda
    1/2 ts Salt

    Recipe



    Heat oven to 400F degrees. Grease bottoms only of 12 medium muffin cups, 2 1/2 X 1 1/4
    inches, or line with paper baking cups. Beat yogurt, oil, basil, and egg in a large bowl.
    Stir in remaining ingredients just until flour is moistened. Divide batter evenly among
    muffin cups (cups will be about 3/4 full).

    Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.
