    Herbed Tomato Cheese Muffin Tops

    1 1/2 cups all purpose flour
    2 tsp. sugar
    1 1/2 tsp. Italian Herb Seasoning
    1 tsp. baking powder
    1/2 tsp. salt
    1/8 tsp. baking soda
    1/2 cup milk
    1/4 cup butter, melted
    1 egg, slightly beaten
    8 sundried tomatoes, packed in oil, well drained and chopped
    2 oz. soft goat cheese, such as a Montrachet, crumbled

    Recipe



    1. Preheat oven to 400.

    2. Mix together the flour, sugar, Italian seasoning, baking powder, salt and baking soda. Add combined milk, butter, egg and tomatoes. Mix just until dry ingredients are moistened. Gently fold in the goat cheese.

    3. Fill muffin top tin cups about 3/4 full, using about 1/4 cup of batter. Bake 10 to 12 minutes or until wooden pick inserted in center comes out clean. Let Muffin Tops stand a few minutes; then remove from pan. Cool on wire rack.
    Makes six muffin tops.
