Linda Radzvilla Cinnamon Potato Rolls

List of Ingredients
3 cups hot water(125-135 degrees)
1 cup honey
1 cup softened butter
1 cup unseasoned mashed potatoes
2 eggs (room temp)
10-12 cups fresh milled hard white wheat such as Prairie Gold or you may use white flour, all purpose
4 T. SAF instant yeast
6 T. nonfat dry milk
3 T. Cinnamon
4 T. salt
2 T. dough enhancer (optional)
Filling:
2/3 cup butter, softened and divided
3 T. cinnamon
1 1/2 cups brown sugar or sucanat(raw sugar)
In order given, add first 5 ingredients to mixer bowl and 3 cups of the flour and all of the yeast Mix slightly and then continue adding the remaining ingredients and enough of the remaining flour until the dough pulls away from the sides of the bowl. Continue kneading until gluten is developed, 5-6 minutes in the bosch.
Divide dough into two sections that are 22" X 14" rectangles and spread the softened butter on each and sprinkle with cinnamon and sugar. Roll up and divide into eleven 2 inch slices that are cut with a serrated knife. Place on greased sheets and rise until double.
Bake at 350 degrees for about 10 min then lower temp. to 325 degrees and bake until done about 10-15 min. Cool and frost.
Frosting: 6 T. flour
2 T. vanilla
1 1/2 cups soft butter
3 cups powdered sugar
speck of salt
mix and spread on cooled buns.
These freeze well!
