    Dry Ingredients:
    5 cups unbleached flour
    2/3 cup sugar
    1 teaspoon baking powder
    2 teaspoons baking soda
    2 teaspoons cinnamon

    Wet ingredients:
    2 cans (12 ounces) canned mandarin oranges, pinched (including juice)
    2 eggs
    2 egg whites
    2 Tablespoons canola oil
    1 teaspoon orange zest
    1/2 teaspoon orange extract

    Recipe



    Mix together dry ingredients so all are blended thoroughly. In a measuring pitcher combine all wet ingredients. Be sure to pinch the pieces of orange apart, so there are no large clumps. Pour wet ingredients into dry, mix just until moist.
    DO NOT OVER MIX!!!
    Spray muffin tins with non-stick cooking spray. Then, spoon batter into muffin tins and top off by sprinkling each with about 1/4 teaspoon of sugar. Bake at 325 degrees F for about 20 minutes or until golden brown.

    Serves: 24
