    2 ½ Cups All Purpose Flour
    1 ½ Cups Fresh or Frozen Berries
    1 Cup Granulated Sugar
    1 Tablespoon Baking Powder
    1 Teaspoon Baking Soda
    ½ Teaspoon Salt
    ½ Cup Non-fat Milk
    ½ Cup Non-fat Plain Yogurt
    ½ Cup Non-fat Ricotta Cheese
    ½ Cup Gauva Nectar (optional)
    1 Tablespoon Vanilla
    3 Large Farm Fresh Eggs

    Preheat oven to 400 degrees. Combine first 6 ingredients in large bowl. Combine remaining ingredients in another bowl; stir well with a wire whisk. Add to flour mixture, stirring just until moist- do not over mix. Spoon batter into 18 muffin cups coated with cooking spray. Bake at 400 degrees for 18 minutes or until done. Remove from oven and cool on a wire rack.
