    Orange Cranberry Bread - ABM

    1 1/4 C. orange juice (not cold)
    2 T. butter or vegetable oil
    1 t. salt
    3 1/4 C. bread flour (adjust amount as needed)
    2 T. sugar
    2 T. powdered milk
    1 t. dried orange peel (or zest from 1/2 an orange)
    2 t. yeast (I use "Fleischmann's Bread Machine Yeast")
    3/4 C. dried cranberries

    NOTES:

    Program machine for a 2-lb. loaf with light crust.

    It's best not to add cranberries until "the beep" or they will cause too much sugar to be released into
    the dough and it will not rise as well.

    I use the sandwich setting on my Zo V-20, so that the crust is softer. When made in my other
    machines, I remove the pan about 10 minutes before it's done. Otherwise, the high level of sugar in
    the bread makes for a dark crust.

    By the way, OJ made with extra calcium seems to work fine.
