    Raspberry & Lime Muffins w/Toffee Sauce

    8 mini milk chocolate muffins
    8 raspberries
    4 thin slices lime, halved
    2-3 tbsp banoffee toffee sauce
    2-3 tbsp double cream

    Recipe



    1. Preheat the oven to 425F.
    2. Cut the tops off the muffins and set aside. Using a melon baller, hollow out the centre of each muffin and fill with one of the raspberries.
    3. Place a piece of lime over the top and drizzle with a little of the toffee sauce. Replace the muffin tops and transfer the muffins to a baking tray. Warm through in the oven for 2-3 minutes.
    4. Arrange the warm muffins on a serving plate with the remaining sauce and cream trickled around them. Eat at once.
