    Sour Cream Banana Bread

    Bowl # 1, mash together:
    3 ripe bananas- but not over ripe!
    juice from a fresh lemon
    1 cup sour cream ( or buttermilk )
    Blend in:
    2 large eggs
    1 cup oil

    Bowl # 2, mix:
    2 cups flour
    1 cup sugar
    1 tsp baking powder
    1 tsp baking soda
    11/4 tsp salt

    Combine both mixtures and mix well at low to medium speed with mixer until well blended. Pour into a large greased 9 x 5 x 3 inch pan. Bake in a 350F oven, middle rack 50 to 55 minutes or tested done.Cover top with foil if browning too fast. Cool in pan 15 minutes before removing. Cool completely. Wrap in foil and slice the following day.
