    Tropical Muffins With Fresh Lemon Glaze

    Muffins:
    2 cups all-purpose flour
    2 teaspoons baking powder
    ½ teaspoon baking soda
    ½ cup chopped dried cranberries
    1/3 cup butter or margarine
    ¾ cup sugar
    2 eggs
    2 tablespoons fresh lemon juice
    1 cup plain yogurt
    1 cup mashed banana
    ¼ cup minced crystallized ginger

    Glaze:
    1 cup powdered sugar
    1 tablespoon softened butter or margarine
    1-2 tablespoons whipping cream
    ½ teaspoon fresh lemon juice
    1 teaspoon grated lemon peel

    Heat oven to 375 degrees F. Lightly grease T-Fal Patisserie 12-cup muffin pan.

    In a medium bowl, blend flour, baking soda and baking powder. Stir in cranberries till coated. In separate mixing bowl, beat butter and sugar till fluffy. Add eggs and 2 tablespoons lemon juice. Beat till creamy. Add dry ingredients, yogurt and banana, beating till combined. Stir in ginger. Divide batter among prepared muffin cups. Bake in 375 degree F. oven 25-30 minutes, or till nicely browned. Remove to rack to cool.

    In small bowl blend powdered sugar, 1 tablespoon butter, 1-2 tablespoons cream, ½ teaspoon lemon juice and 1 teaspoon lemon peel. Mix till desired consistency. Drizzle glaze over muffins. Serve warm or room temperature. Makes 12 muffins.
