Aloha Apple Muffins

3 cups diced apples
1 cup crushed or chopped pineapple (well-drained if using canned)
1 cup sugar
2 eggs, beaten slightly
½ cup canola oil
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
¾ cup raisins
¾ cup coconut
¾ cup nuts (macadamia or pecan)
Recipe
Using three bowls, mix apples, pineapple and sugar in one, eggs, oil and vanilla in another blending well, and the flour, baking soda, cinnamon and salt in the third stirring with a fork.
Mix egg mixture with apple/pineapple mixture and blend thoroughly. Sprinkle flour mixture over apple mixture and mix well. Better may be a little stiff but that’s ok. Mix in raisins, coconut and nuts until evenly distributed. Spoon into greased muffin tins or small loaf pans. Makes 16 muffins or 4 small loaf pans. Bake 25 minutes.
While muffins are still warm, poke holes with wooden skewer and drizzle rum sauce over them.
Rum sauce:
¼ brown sugar, 6 Tbs. Heavy cream, 3-4 Tbs. Rum (dark or light). Heat sugar in saucepan with heavy cream until sugar is dissolved. Add rum and stir until blended. Cool slightly. Pour over muffins or small loaves.
