    1 1/2 cups of unbleached, sifted flour
    1/2 cup of sugar
    2 teaspoons of baking powder
    1/2 teaspoon of salt
    1 1/2 teaspoons of ground cinnamon
    1/4 cup of vegetable shortening
    1 large egg, slightly beaten
    1/2 cup of milk
    1 cup of tart apples, peeled, cored and grated

    For the topping:
    1/4 cup of brown sugar, packed
    1/4 cup of chopped pecans
    1/2 teaspoon of ground cinnamon
    (Mix these ingredients together in a bowl set aside to sprinkle
    on top of the muffins)

    Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. Cut in shortening with pastry blender until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten. Stir in apples. Spoon batter into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full. Sprinkle with nut crunch topping and bake for 25 minutes at 375 degrees F. or until golden brown.
