    3/4 cup whole wheat flour
    1/2 cup regular flour
    1 cup oat bran
    1/2 cup sugar
    1 Tbs. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 cup chopped nuts (walnuts or pecans)
    1/2 cup vegan chocolate chips
    3/4 cup soy milk
    1/4 cup applesauce
    1 tsp. vanilla extract
    2 really really ripe bananas*

    *We're talking really ripe – like where the peel is all black & gross looking and you're frankly afraid to open it

    Yield: 12 muffins
    Preheat oven to 400º.

    Combine dry ingredients in a large bowl. Whisk milk, applesauce, vanilla extract to blend in a medium bowl. Add milk mixture to dry ingredients, stir until just combined. (Batter will be lumpy.) Peel bananas and mash them in the now-empty "wet" bowl, then fold them into the batter.

    Divide batter among 12 greased muffin cups. Bake about 20 minutes, or until toothpick inserted into center of muffins comes out clean. Transfer to rack to cool.

    Serve warm or at room temperature...no, actually, warm. With margarine. Mmmm, margarine-y.

    Variations: Omit the chocolate chips and increase the nuts to 3/4 cup. Also, I've used all wheat flour instead of some white and some wheat, and the muffins were deliciously moist.
