    6 slices bacon, cooked crisp, crumbled
    1 cup yellow corn meal
    1 cup flour
    1 tsp. chili powder
    1 tsp. cumin
    2 Tbsp. sugar
    1/4 cup canned chopped green chilies
    1 cup canned corn kernels
    6 sun dried tomatoes packed in olive oil, drained and chopped
    1/2 tsp. salt
    1 egg beaten
    1/2 cup EXTRA VIRGIN OLIVE OIL

    Recipe



    1. In a mixing bowl combine cornmeal, flour, baking powder, sugar, cumin, chili powder and salt. Mix thoroughly.

    2. Add corn, tomatoes, chilies, egg, milk, olive oil and bacon. Continue mixing until all ingredients are combined.

    3. Lightly oil an 8" x 8" pan and spoon mixture in. 4. Bake in a preheated 425 degree oven for 20 minutes. Cool slightly and cut into 9 squares.
