Glazed Lemon Poppyseed Muffins

4 eggs
1 1/2 cups sugar
1/2 cup EXTRA VIRGIN OLIVE OIL
1 tsp. poppyseed
1/4 cup fresh lemon zest
1 1/2 cups whole sour cream
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. kosher salt
1 pound cake flour
Recipe
1. Preheat oven to 400 degrees.
2. Combine eggs, sugar, olive oil, poppyseed, lemon zest and sour cream in a mixing bowl. Beat well to combine, mixture should be fluffy and slightly glossy.
3. Sift flour, salt, baking soda and baking powder together in medium size bowl. Fold into wet mixture, beating just to combine. Do not over beat at this stage.
4. Pour into greased muffin tins. Bake in 400 degrees oven for 22 minutes.
5. While muffins are cooking make glaze by mixing powdered sugar, lemon juice and lemon zest in small bowl. Stir to eliminate any lumps. Drizzle glaze over muffins, hot from the oven and serve immediately.
