    6 cups unbleached, all-purpose flour
    1/2 oz. active dry yeast (2 individual packages)
    1/4 cup sugar
    1 tsp. salt
    1/2 tsp. baking soda
    2 1/2 cups warmed milk (about 100° to 105°)
    1/2 cup warmed water
    2 TBSP. fresh, finely chopped basil
    1/2 cup Parmesan cheese
    Cornmeal for dusting

    Preheat the oven to 400°. In a large mixing bowl, combine 3 cups of the flour with the yeast, sugar, salt, and baking soda. Add the warm milk and water. Blend until smooth. Gradually add the remaining flour, fresh basil, and Parmesan cheese, blending well until a stiff dough forms.

    Transfer the dough to a floured surface and knead for 8 minutes by hand. Divide the dough between 2 (9x5-inch) bread pans that have been sprayed with cooking oil and dusted with cornmeal. Allow the bread to rise in the pans for 45 minutes. Bake for 20 to 25 minutes or until the bread is golden on top. Remove from the pans and allow to cool on racks before cutting.

    Makes 2 loaves

    NOTE: Toast bread slices for breakfast
