Mango Bread

2 cups flour
2 tsp cinnamon
2 Tsp baking soda
1/2 tsp salt
1-1/2 cups sugar
3 whole slightly beaten eggs
1 tsp vanilla
1 cup vegetable oil
2 cups diced mangos
1/2 cup chopped walnuts
1/2 cup shredded coconut
1/2 cup raisins
Recipe
Sift together the flour, cinnamon, baking soda, salt and sugar. In a large bowl, combine the remaining ingredients and mix well. Add sifted dry ingredients and mix well.
Lightly butter a large loaf pan or several small loaf pans. Pour in batter and bake 1 hour at 350ø. (If using small loaf pans, mango bread probably will be done in about 50 minutes). Test for doneness by inserting a toothpick in the top of the bread. If it comes out clean, the bread is done.
