    1/4 cup plus 2 Tbs. unsalted butter, softened
    1/2 cup brown sugar, firmly packed
    4 egg whites
    1 tsp. vanilla extract
    1-1/2 cups quick cooking oats
    1-1/4 cups all purpose flour
    1-1/2 tsp. cinnamon
    1 tsp. salt optional
    1 tsp. baking soda
    1 tsp. baking powder
    1 cup applesauce
    2 Tbs. water
    1 cup raisins

    Preheat oven to 350°F. Butter 2 muffin cups per serving and set aside. Using an electric mixer, cream butter and brown sugar in a mixing bowl. Beat in egg whites and vanilla until smooth. Stir in remaining ingredients, except raisins, until just moistened. Fold raisins into lumpy batter. Spoon into muffin cups. Bake 20-25 minutes or until tester comes out clean when inserted in center. Let cool 5 minutes in cups.

    Serves 6
