    2 3/4 cups flour
    1 Tbsp. baking powder
    1 tsp. salt
    1/3 cup brown sugar
    2/3 cup sugar
    1 Tablsp. grated orange zest
    2 cups grated coconut
    1/2 cup fresh orange juice
    1 large egg, well beaten
    2/3 cups evaporated milk
    1 tsp. vanilla extract
    1/2 cup butter, melted and cooled

    Recipe



    Sift together the flour, baking powder and salt. Mix in the sugar, coconut, orange zest, orange juice, egg, milk, vanilla, and butter, mixing lightly but well. Place dour into greased 9x5x-inch loaf pan. Bake in a preheated 350ºº oven until toothpick inserted in center comes out clean, usually about 55 to 65 minutes. Let cool a little in the pan, then turn out on cake rack. Yield: 1 (9 inch ) loaf.
    This one is a little unusual and I made it in the mini loaves and then glazed with a cream cheese frosting. It was a nice and moist bread. I have taken this one also, from my files and so it has my notes included at the bottom.
