    2 3/4 cups all purpose flour, sifted
    1 cup sugar
    2 1/2 tsp baking powder
    1 tsp baking soda
    3/4 tsp salt
    1 1/4 cups fresh orange juice
    1 egg
    1 tbsp grated orange rind
    1 tbsp salad oil
    1/2 tsp vanilla
    2/3 cups riced cooked potatoes
    1/2 cup nuts, chopped

    Preheat oven to 325 degrees F. Grease a 9x5x3-inch loaf pan.

    In large bowl sift together flour, sugar, baking powder, baking soda and salt.

    In small bowl, beat together orange juice, egg, orange rind, oil, and vanilla. Stir in prepared potatoes. Add orange mixture all at once to dry ingredients and stir to mix well; stir in nuts. Turn into prepared loaf pan.

    Bake in 325 oven 60 minutes or until cake tester inserted comes out clean. Cool 10 minutes. Remove from pan and cool completely.
