Peanut Butter Banana Muffins

1-1/2 cups unsifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 cup whipping cream
6 tbl. margarine or butter, softened
1/3 cup peanut butter
1/4 cup packed light brown sugar
2 large, ripe bananas, mashed
1/2 cup pure maple syrup
1 egg
1 tsp. vanilla
1/4 cup chopped peanuts

Preheat oven to 350 degrees.
In a small bowl, combine flour, baking powder and baking soda. In a large mixer bowl, beat cream, margarine, peanut butter and sugar until smooth. Add bananas, maple syrup, egg and vanilla; mix well. Add flour mixture; stir until moistened. Fill paper-lined 2-1/2 inch muffin cups 3/4 full; sprinkle with nuts. Bake 25 to 30 minutes or until golden brown. Remove from pans; serve warm.
