    Upside Down Lemon Coconut Muffins

    TOPPING:
    1/2 cup coconut
    1/2 cup brown sugar
    2 tbl. flour
    3 tbl. melted butter
    1/8 tsp. nutmeg

    Mix topping ingredients together in a small bowl. Divide topping ingredients evenly into 12 well greased mufin cups.

    MUFFINS:
    2 cups sifted flour
    3 tsp. baking powder
    1/2 tsp. salt
    1/4 cup sugar
    1/4 tsp. nutmeg
    1 egg
    1 cup milk
    3 tbl. melted butter
    1 tbl. grated lemon peel
    1 tbl. lemon juice

    Whisk the flour, baking powder, salt, sugar and nutmeg together. Beat the egg lightly and add the milk, melted butter,lemon juice and lemon peel together.

    Stir the milk mixture into the dry ingredients just until combined.

    Fill muffin tins 3/4 full.

    Bake at 400 degrees for 20 minutes, or until browned. Turn muffins from the pan immediately and serve upside down.
