    1-3/4 cups all-purpose flour
    3 tablespoons grated Parmesan cheese
    1 tablespoon sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 egg, lightly beaten
    3/4 cup milk
    1/4 cup olive oil
    1 zucchini, shredded (1 cup)
    1 tablespoon finely chopped fresh basil

    Heat oven to 400 degrees F. Lightly grease bottom of each cup in a standard 12-muffin pan. Combine flour, Parmesan, sugar, baking powder and salt in a large bowl. Mix egg, milk, oil, zucchini and basil in a small bowl. Add to flour mixture all at once; stir with a fork until ingredients are just combined. Spoon batter evenly into prepared muffin pan. Bake in heated 400 degree F. oven until tops are lightly browned and a wooden pick inserted in centers comes out clean, 22 to 24 minutes. Run a small knife around edge of muffins; remove from pan. Cool on a wire rack 6 minutes. Serve warm.
