    1 Jonathan/Granny Apple, sliced
    2 Tbsp. butter
    7/8 cup flour
    5 eggs
    1 cup skim milk
    1 Tbsp. vanilla
    dash salt

    fruit for topping: sliced bananas, kiwi, strawberries, blueberries, peaches, mangoes .. whatever is pretty and in season.

    Preheat oven to 420 degrees. Spray non-stick coating (such as Pam) on 4 small 8" ramekin pans, or one large pie size pan. Saute apples in butter until soft. Spread in the bottom of prepared pans. In blender mix eggs, flour, milk, vanilla, and salt. Pour egg mixture over apples. Bake for 25 minutes (30 if large pan). When lightly browned, remove from oven. Slide pannekoeken onto serving plate, sprinkle with powdered sugar, top with fresh fruits and sprinkle again with powdered sugar. Makes 3-4 servings.
