    4 eggs, well beaten
    1/2 cup flour
    1/2 tsp. salt
    1/2 cup milk
    2 Tbs. butter
    Powdered sugar
    1 lemon, juiced

    2 servings

    Preheat oven to 400º.

    Sift together flour and salt. Add alternately with milk to beaten eggs a little at a time while beating briskly. Spread butter evenly on bottom and sides of well-seasoned 10-inch cast iron skillet. Pour in batter and place in pre-heated oven. Bake 20 to 25 minutes while gradually reducing heat to 350º.

    The pancake is done when it is puffed up high above the sides of the pan and has turned golden brown. Slide pancake onto a plate, butter, sprinkle generously with powdered sugar and drizzle lemon juice over the sugar.

    The pancake will fall quickly and will be quite heavy.

    Cut into 4 wedges and serve.
