    1 1/3 c. egg whites (about 12-13)
    1 1/3 tsp. cream of tarter
    1/4 tsp. salt
    1 1/4 tsp. vanilla or flavoring
    1 c. flour
    1 1/2 c. sugar

    Recipe



    Add 1/2 c. sugar to flour, sifting 4 times. Beat egg whites by hand until frothy. Add salt, and cream of tarter; continue beating till egg whites are glossy and will hold a stiff peak. Gradually add sugar, then flour to which 1/2 c. sugar has been added. Pour batter into pan; gently cut through with a knife to break air bubbles. Bake at 325 degrees until top of cake is brown and dry-looking. Turn upside down until cake is cold.
