    1-3/4 cups of chocolate crumbs (cookies)
    2 TBSP. sugar
    1/3 cup butter, melted
    8 oz of the best chocolate (I use BAKER'S GERMAN SWEET CHOCOLATE, divided
    2 eggs
    2/3 cup light or dark corn syrup
    1/3 heavy cream
    1-1/2 teas. pure vanilla extract
    8 oz Cream cheese (I use PHILADELPHIA BRAND) cut up in cubes and softened

    Combine cookie crumbs, sugar and butter in 9 inch pie plate (I use a springform pan) until well mixed. Press into pie plate

    Microwave 1-1/2 (6-oz) chocolate in bowl, stirring halfway through heating time; stir until melted.

    Place eggs, corn syrup, cream and vanilla extract in blender. Cover, blend until smooth. With blender running, gradually add cream cheese, blending until smooth. Pour into crust.

    Bake 55 minutes or until center is set, cool on rack, cover, and leave in refrigerator overnight

    Just before serving melt remaining chocolate (2 oz) and drizzle over top.
