    The secret of success with this Torte lies in the thinness of the layers

    List of Ingredients




    5 eggs, separated
    1/2 cup sugar
    1 Tbsp. lemon juice
    1/2 cup sifted all-purpose flour
    1/4 tsp. salt

    Recipe



    Prepare three 9-inch layer-cake pans with removable bottoms. Butter them and dust with flour.

    Beat egg yolks until thick. Beat in sugar and then lemon juice, continue beating until mixture is thick and creamy.

    Sift flour and salt into a bowl. Stir the egg mixture into this.

    Beat egg whites until stiff. Fold these gently into batter

    Spread 5 TBSP. of batter on each pan. Bake at 350 for 5 minutes or until browned.

    Turn out onto a cake rack. Repeat this until all the batter is used. (you should have 8 to 10 layers)

    Use Chocolate Buttercream Icing for this cake. Put the cake all together with this icing.

    Chocolate Buttercream Icing

    1//4 cup sweet butter
    3/4 cups confectioner's sugar
    1 tsp. pure vanilla extract
    3 oz chocolate, melted
    2 egg whites
    pinch of salt

    Cream butter and sugar very well. Add vanilla extract and chocolate. Blend well.

    Whip egg whites with salt until stiff. Fold these into the chocolate mixture.

    Chill the cake overnight.
