    2/3 cup extra-virgin olive oil, plus extra

    2 2/3 cups flour, plus extra

    1 1/4 cup sugar

    2 eggs

    2 tsp. Vanilla extract

    3 1/2 T baking powder

    1 1/2 cups milk

    zest of 1 lemon

    confectioners' sugar for dusting

    Pre-heat oven 10 375 degrees. Grease and flour a 18x13 inch baking sheet. In a large bowl, whisk the sugar, eggs, vanilla, and baking powder until pale and frothy. Whisk in the milk, olive oil and lemon zest. Stir in the flour until just combined, pour into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted in the center come out clean. Dust wuth confectioners' sugar.

    Notes:

    Substutions

    Bottled lemon juice: Remove the lemon zest and substitute 1 tsp. lemon juice. Add the mixture along with the milk and olive oil.

    Lemon infused olive oil: Remove the lemon zest. Reduce olive oil to 1/2 cup. Add 2 T lemon-infused olive oil.
