    2 cups (4 sticks) margarine, softened
    2-1/2 cups (1 lb.) packed light brown sugar
    6 eggs, separated
    4 cups flour
    1/4 tsp. salt
    2 tsp. baking powder
    1/2 cup milk
    1-1/2 oz. bottle lemon extract
    2 cups pecans, chopped

    Preheat oven to 300 deg. Cream margarine and sugar. Add egg yolks; blend well. Sift flour, salt and baking powder together. Add flour mixturealternately with milk. Add lemon extract and pecans. Mix until well blended. Beat egg whites to peaks. Fold into batter. Pour into a 10"stem pan that has been greased and dusted with flour. Bake at 300 deg. for 1 hr. and 40 min., or until toothpick inserted in center comes out
    clean. Do not overbake. Allow cake to cool before removing from pan.
