    Luscious Zucchini Cake

    3 cups all-purpose flour
    3 cups granulated sugar
    1 teaspoon salt
    1 tablespoon baking soda
    1 tablespoon cinnamon
    1 teaspoon nutmeg
    1 1/2 cups corn oil
    4 eggs, lightly beaten
    1 tablespoon vanilla
    1 cup pecans, chopped
    2 cups zucchini, grated
    Frosting:
    8 ounces cream cheese
    6 tablespoons butter or margarine
    3 1/2 cups powdered sugar
    1 teaspoon maple extract
    1 teaspoon cinnamon, optional

    Recipe



    1. Sift dry ingredients into a bowl.
    2. Add oil, eggs, and vanilla. Beat well.
    3. Fold pecans and grated zucchini into batter.
    4. Grease and flour two 9 inch layer cake pans. Line with waxed paper.
    5. Pour batter into pans.
    6. Bake at 350 degrees for 30 to 35 minutes, or until a cake tester inserted in center comes out clean.
    7. Cool on a cake rack for 10 to 15 minutes. Carefully remove from pans. Continue to cool on racks.
    8. For frosting, beat together the cream cheese, butter, powdered sugar and maple extract until creamy.
    9. Frost top, middle and sides of cake. Sprinkle with cinnamon, if desired.
