    2 Cups Flour
    2/3 Cup Shortening
    1 Tsp. Salt
    5 to 7 Tabs. Ice Water

    In a medium bowl combine flour and salt. Using pastry blender or fork, cut shortening into flour until mixture resembles coarse crumbs. Sprinkle flour mixture with water, 1 Tbs. at a time, while tossing and mixing lightly with a fork. Add water until dough is just moist enough to form a ball when lightly pressed together. Shape dough into 2 balls.

    Flatten 1 ball to 1/2" thickness, rounding and smothing edges. On lightly floured surface, roll from center to edge into 11" circle. Fold pastry in half; place in a 9" pie plate. Unfold; gently press in bottom and up the sides of the pan. Do not stretch. Trim pastry even with an edge. Roll out remaing pastry; set aside.


    FILLING
    6 Cups sliced, peeled apples
    1 Tsp. Cinnamon
    1 Cup Bob's Maple Syrup
    1/2 Tsp. Salt
    2 Tab. Flour
    2 Tsp. Margarine
    Put apples into pastry lined pie plate. Combine syrup, flour, cinnamon, salt and pur over apples. dot with butter. Top with remaining pastry. Brush top of pie with milk to aid in browning.

    Bake at 425 about 50 minutes.
