    Crust:

    1 cup graham cracker crumbs
    1/3 cup melted butter

    Filling:

    3 8-oz. pkg. cream cheese, softened
    1 cup sugar
    5 eggs
    1 16-oz. can pumpkin
    1/2 cup Courvoisier cognac (4 oz.) buy the nips
    1 Tbs. maple syrup
    1 tsp. cinnamon
    1 tsp. nutmeg

    Topping:

    1 cup sour cream
    2 Tbs. Cognac
    1 Tbs. maple syrup
    1/4 cup sugar

    Recipe



    Press crust mixture on bottom of 9" springform pan. Chill.
    Beat together cream sugar with cream cheese in large bowl till well blended. Beat in eggs, one at a time till light & fluffy.
    Blend pumpkin, cognac, maple syrup, cinnamon & nutmeg. Pour into crust.
    Bake at 325º 1-1/2 hrs.
    Increase heat to 400º
    Blend together topping ingredients and spread over cake. Bake an additional 10 minutes. Cool.
    Remove sides from pan. Chill.
    Garnish with coarsely chopped walnuts.
    Serves 16
