    1 env. Gelatin

    3/4 c. brown sugar

    1 1/2 tsp. Pumpkin pie spice

    3 lg. eggs - separated

    1 1/2 c. pumpkin

    1/2 tsp. Salt

    3/4 c. milk

    1/4 c. sugar

    Recipe



    In 3 quart metal mixing bowl put gelatin, brown sugar, salt and pumpkin pie spice. Stir in milk. Using Whisk, beat in egg yolks and then pumpkin. Put over boiling water. Cook 15 minutes stirring constantly until hot and steamy and gelatin and sugar are dissolved. Remove from heat and chill 2-3 hours. Mixture will mound when dropped from spoon. Beat egg whites and 2 tablespoons sugar at a time. Fold into pumpkin mixture. Put in baked pie shell and chin several hours. Top with whipping cream if desired.
