    Rhubarb Upside Down Cake

    5 c rhubarb cut in small pieces
    1 small package red Jell-O
    3 Cups miniature marshmallows
    1 c sugar
    1 yellow cake mix

    Recipe



    Put rhubarb in 9x13 pan.
    Mix & sprinkle over rhubarb the sugar & Jell-O
    Spread the 3 c miniature marshmallows over the rhubarb mixture.
    Mix cake mix as per directions on box and pour over the rhubarb mixture.
    Bake 350 for 1 hour.
    Cool a few minutes and flip on a large board or platter (I use a foil lined cutting board)
    Cover with Cool Whip
