    Roasted Banana Cheesecake

    2 lb softened cream cheese
    3/4 cup of sugar
    1 t vanilla
    2 cups of roasted bananas*
    1 cup of sour cream
    3 eggs

    Recipe



    Cream together the cream cheese and sugar until thoroughly blended and smooth, scrape the sides of your bowl frequently.

    Add your roasted bananas, sour cream and vanilla, blend until smooth. Add your eggs one at a time and blend thoroughly until the egg is totally incorporated then add your next egg. Taste the batter and say, "...man, chefmike this is really good..." your endorphins should be going ballistic by that point.

    Notes-

    Roasting Bananas- Set your oven on broil, oven rack in the center. Spray a baking pan with vegetable spray, cut your bananas lengthwise after removing the threads and place on the baking dish cut side down. Brush the bananas with butter and sprinkle the bananas with a little bit of salt and broil until tender, about 10 minutes. Cool and mash the bananas before adding to your cheesecake batter. I spoke with the owners of the Babcock House, Jerry and Shelia, although this recipe is different, they say they roast the bananas in the skin. They feel roasting in this manner keeps the flavors inside the banana. Will have to try it next time I make it, sounds good to cheffy.

    Crust and Assembly

    10 chocolate graham crackers
    3 T Butter
    3 T Sugar
    Cooking Spray
    Wax Paper

    Place your graham crackers in a food processor and chop fine. In a mixing bowl combine the wafers, butter and sugar until well incorporated.

    Preheat your oven to 350. Boil a pot of water. Cut a circle out of wax paper to fit the bottom of your 9 inch spring form pan.

    Assemble your pan and place the wax paper on the bottom, spray the entire spring form with the cooking spray. Press your crust in the bottom of the pan to an even thickness.

    Fill your pan 3/4 with the cheesecake batter and place in a high sided baking dish, allowing at least one inch between the springform pan and the sides of your baking dish. Place a folded terry cloth in the center of your baking dish before placing your springform in the pan.

    Pull out your center rack enough to place your baking pan in the oven and still be able to pour some of your boiling water into your baking dish. Pour enough boiling water in the pan to come up the sides of the springform pan at least one inch.

    Bake at 350 for 1 hour and 15 minutes. Shut off oven and allow to rest in the oven for another 45 minutes. Remove from the oven and refrigerate overnight.

    White Chocolate Icing

    This was great with the Roasted Banana Cheesecake

    In a double boiler place 8 ounces of white chocolate and cover with plastic wrap. Shut off your heat source. Allow to set for 5 minutes, stir the chocolate, if not completely melted put the top of the double boiler on for another couple minutes

    Beat room temperature cream cheese in a mixing bowl until smooth, add your melted chocolate and beat until completely incorporated. Spread the icing on a cooled cheesecake evenly, use the decorators tip on a pastry bag to decorate your cake if you so desire.

    *notes- This cheesecake was one of the best ones I have come up with in a long time. I really like the incorporation of the white chocolate icing, the chocolate in the crust and the roasted bananas in the batter...pretty awesome. ..
