    2 Envelopes unflavored gelatin
    1/2 cup Cold water
    1 can (6 oz) frozen Limeade
    Concentrate
    1/3 cup Sugar
    3/4 cup Water
    1 teaspoon Grated lime rind
    1 cup Diced strawberries
    1 cup Heavy whipping cream
    Whipped
    Green food coloring
    Pastry for 1-crust pie
    Baked
    Sliced strawberries, for
    Garnish

    Combine gelatin and cold water in bowl; let soak for 5 minutes. Combine limeade concentrate, sugar, and 3/4 cup water in small saucepan. Cook over low heat, stirring constantly, until concentrate is melted and sugar dissolved. Add gelatin; stir until gelatin is dissolved. Remove from heat and chill until syrup consistency. Stir lime rind and strawberries into gelatin mixture. Fold in whipped cream until blended; tint pale green with food coloring. Chill until mixture mounds when dropped from spoon. Place gelatin mixture in baked pie shell; refrigerate for 2 to 3 hours, until firm. Garnish with sliced strawberries.
