    1 (30 oz.) can sweet potatoes
    1/8 tsp. lemon extract
    1 c. sugar
    1 1/2 tsp. vanilla extract
    3 eggs, separated
    1 Tbsp. all purpose flour
    1 (10 inch) unbaked pastry shell
    1/4 c. butter or margarine
    1/4 tsp. cream of tartar
    1 c. evaporated milk
    1/2 tsp. vanilla extract
    dash salt
    1/3 c. sugar

    Recipe



    Combine first 9 ingredients and the egg yolks; beat until combined. Pour mixture into pastry shell and bake at 400ø for 10 minutes. Reduce heat to 350 degrees and bake for 30 additional minutes or until set.

    Meringue:
    Beat egg whites with cream of tartar and vanilla until soft peaks form. Gradually add 1/3 cup sugar, 1 tablespoon at a time, beating until stiff peaks form. Spread meringue over filling, sealing to edge of pastry. Bake at 350ø for 10-12 minutes or until golden. Cool completely before serving. Serves on 10 inch pie.
