    Toffee Butter Crunch Cake

    Makes one 9" square cake

    Cake:
    1 tablespoon black coffee
    6 tablespoons butter, softened
    1 egg
    1 teaspoon vanilla
    1 1/2 teaspoons baking powder
    3/4 cup packed light brown sugar
    3/4 cup milk
    1 1/4 cups all-purpose flour
    1/2 teaspoon salt

    Topping:
    1/3 cup packed light brown sugar
    2 tablespoons all-purpose flour
    1 tablespoon butter, softened
    1/2 cup Skor toffee chips

    Preheat oven to 350 degrees. Grease and flour a 9" square pan. Beat together the coffee, 3/4 cup brown sugar, 6 tablespoons butter and egg until smooth. Add milk, 1 1/4 cups flour, vanilla, baking powder and salt. Beat 1 minute to blend well. Scrape into prepared pan.

    Mix together the 1/3 cup brown sugar, 2 tablespoons flour, and 1 tablespoon butter with cool fingertips in a small bowl until crumbly. Mix in the toffee chips. Sprinkle evenly over the cake batter.

    Bake for 35 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a wire rack.
