Chocolate Peanut Fudge

1 1/2 cups unsalted peanuts, shelled
2 cups granulated sugar
1 cup milk (whole is best)
l/2 cup unsweetened cocoa
1 tsp pure vanilla extract
unsalted butter
Recipe
Preheat oven to 325 degrees F. Toast peanuts on baking sheet for 6-7 min. 'till golden-brown. Remove from oven and set aside. Heat sugar, milk, cocoa and salt in 2 1/2 qt. saucepan over medium heat. Stir until mixture is smooth and sugar dissolves. Bring to a boil. Adjust heat to med-low. Insert candy thermometer, and cook till it reaches 245 degrees F., about 20-25 min. Using rubber spatula, scrape down the sides of the saucepan every 5 min. or so. Remove from heat. Vigorously stir in vanilla and 3 tablespoons butter. Fold in peanuts and pour mixture into lightly buttered 9x9x2 inch square cake pan. Cool at room temperature 45 min before cutting. Makes 1 1/2 pounds.
