    BOTTOM LAYER:
    1/2 cup butter or margarine
    1/4 cup sugar
    5 tablespoons cocoa
    1 egg -- beaten
    1 3/4 cups graham cracker crumbs
    1/2 cup chopped nuts -- walnuts
    3/4 cup fine coconut

    MIDDLE LAYER:
    1/3 cup butter or margarine
    3 tablespoons milk
    1 teaspoon peppermint flavoring
    2 cups sugar, confectioner's
    green food coloring

    TOP LAYER:
    2/3 cup semi-sweet chocolate chips
    2 tablespoons butter or margarine

    Bottom Layer:
    Combine the first 3 ingredients in a saucepan and slowly bring to a boil. Stir a little bit into the beaten egg then return the egg mixture to the rest for thickening. Stir and remove from the heat. Add the crumbs, chopped walnuts and coconut and mix well. Grease a 9-inch square pan and pack the mixture into it very firmly.

    Middle Layer:
    Beat the 1/3 cup butter, 3 tbsp. milk, peppermint flavoring and the confectioner's sugar in a bowl. Add a few drops of green food coloring until it is a nice minty green color. Spread this over the bottom layer.

    Top Layer:
    Melt the chocolate chips and the last amount of butter in the top of a double boiler over hot water. Mix and spread over the middle layer. Cover and chill in the refrigerator before cutting into 36 squares.

    This will keep very well covered and refrigerated; also can be frozen.

    Makes 36 servings
